RECIPE

ASIAN-STYLE VEGETARIAN PATTIES

  • 1 lb Beyond Meat ground beef
  • 1/3 cup panko
  • 1/2 egg
  • 1 sprig scallion
  • 2 tsp grated ginger
  • 1 tsp sesame oil
  • 1 tsp Kosher salt
  • 1/2 tsp ground white pepper
  • 3 tbsp maple syrup
  • 4 tbsp canola oil
  • 1 tbsp toasted sesame seeds

Mix all ingredients in a mixing bowl (except canola oil & maple syrup) by hand and form into 2 oz meatballs.

In a non stick pan add canola oil. On medium heat add the meatballs and start cooking on all sides. About 2-3 minutes each. Make sure you are keeping the form of the shape the best you can.

Cover with a lid in each transitional meatball turn. This will help steam and continue to cook the meatballs from all angles without burning.

When meatball is fully cooked, add maple syrup into the pan and shake the pan around to glaze.

Plate and sprinkle sesame seeds on top to finish.

RECIPE

TURKEY BACON KIMCHI PANCAKES

  • 8oz kimchi, chopped
  • 2 tbsp kimchi, brine
  • 3 oz turkey bacon, cut
  • 3 sprigs scallion
  • 1/2 tsp brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 4 tbsp canola oil

Render out turkey bacon in 4 tbsp of canola oil in a non stick 8-10 inch pan until slightly crispy, remove using chopsticks or tongs. Keep the fat in the pan.

In a mixing bowl, mix every other ingredient and add back into the pan at high heat. It should sizzle when the batter goes in.

Lower the heat to medium and continue to cook for 3-4 minutes. With a spatula, flip the pancake and continue to press to make sure it is flat.

Lower the heat to medium low to make sure pancake is fully cooked.

Remove and cut into 6-8 pieces like a pizza, then eat!
