If you take a peek at Berlin photographer Ezgi Polat’s IG account, prepare to pick your jaw back up off the floor: @ezgipolat is chock-full of moody portraits, dreamy interiors, still-life photographs that will make you (and her over 400k followers) want to be her BFF and, ideally, move in with her straight away (we can only imagine how beautiful her flat must look).

Ezgi is a graduate of Neue Schule für Fotografie and has successfully built up a huge following ever since. And as if that weren’t enough, she’s hugely passionate about food & cooking! Her stunning photos can also be found in her Mediterranean food blog @ischta__, which she co-created with a sibling and good friend. Exclusively for Gorillas, Ezgi whipped up a simple yet perfect recipe, a classic all-rounder that can be served at any time of the day: her special scrambled egg with an Ezgi twist! Intrigued? Read on for the recipe below.

The recipe

What you need:

  • 2 eggs
  • 1 tsp of butter
  • 1 tbsp mineral water
  • 1 pinch of sea salt
  • 1 pinch of pepper
  • 1 handful of chives (optional)

Crack the eggs into a bowl and add salt, pepper, and mineral water. Grab a fork and whisk all the ingredients into a smooth mix. Next, melt the butter in a non-stick pan on medium heat and pour the egg mass into it.

Take a spatula and gently pull the mass from the edge towards the center of the pan, until the egg begins to solidify. It’s important not to let the egg get too dry - turn off the stove while the egg is still moist, the residual heat is enough to give it its ideal, creamy consistency.

Wanna top it off with a little garnish? Wash the chives and cut them across into thin slices, then sprinkle over the egg.

Voilà! Your perfect scrambled egg is ready to serve!
